The number one comment I get from people thinking about trying lamb for the first time is "how do I cook it?" I felt the same way when I started eating lamb, and I think this recipe is the best place to start! The BBQ is very forgiving and adds a familiar depth of flavor to the meat, and the mint sauce balances the flavor of lamb if it is new to you!


Lamb chops are a favorite cut of mine because they are extremely tender, well marbled, and surprisingly easy to cook. After learning to cook it, I can honestly say that I prefer the tender texture and taste of lamb over steak!


Usually you want to sear lamb chops quickly on high heat. Keep them as rare as you are comfortable with, as the more cooked lamb is, the more gamey and "lambey" the flavour. However, the BBQ seems to be an exception to this rule. By starting on low heat and searing last the chops come out nearly well done, but the flavour stays mild with a caramelized crust and fat that has melted into a buttery texture. The mint sauce adds freshness complimenting the richness of the lamb. This recipe is an excellent place to start for those new to lamb!
